Method
 

Preparation of Garlic Butter
  1. In a bowl, mix the softened butter with the roasted garlic. Crush the garlic a bit more with a fork, add salt and pepper, and stir until well blended. Set aside.
Grilling the Steaks
  1. Preheat your grill to medium-high heat.
  2. Season both sides of the steaks liberally with salt and pepper.
  3. Grill for about 4-5 minutes on each side for medium-rare.
  4. Avoid pressing down on the steak; let it relax while cooking.
Finishing Touches
  1. As steaks are nearing doneness, spoon a dollop of roasted garlic butter onto each steak and let it melt.
  2. Let the steak rest for about 5 minutes before slicing.
  3. Slice the steaks against the grain and sprinkle with fresh parsley.

Notes

Make the garlic butter a day ahead for convenience. If grilling makes you uneasy, you can use a stovetop pan with olive oil following the same instructions.
