  • 1 piece pre-made pizza crust Use your favorite store-bought crust.
  • 4 cloves garlic, roasted Roast until golden brown and soft.
  • 2 cups fresh spinach Sauté until wilted.
  • 1 cup ricotta cheese Provides creamy texture.
  • 1 cup mozzarella cheese Use shredded for even melting.
  • 1 tablespoon olive oil For roasting garlic and sautéing spinach.

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. Wrap the garlic cloves in aluminum foil, drizzle with olive oil, and roast for 20-25 minutes until golden brown.
  3. While the garlic is roasting, sauté the spinach in a pan over medium heat with a touch of olive oil for 2-3 minutes until wilted.
  4. Carefully unwrap the roasted garlic and mash the cloves in a bowl to make a paste.
  5. Roll out the pizza crust on a baking sheet or pizza stone. Spread the garlic paste evenly over it.
  6. Dollop and spread the ricotta cheese on top, followed by the sautéed spinach and mozzarella. Sprinkle with salt and pepper.
  7. Bake in the oven for 12-15 minutes until the edges are crispy and the cheese is bubbling.
  8. Cool for a couple of minutes, slice, and serve.

Notes

For an extra kick, consider adding feta or goat cheese, or incorporating other vegetables like artichokes or sun-dried tomatoes. Store leftovers in an airtight container for up to 3 days.
