Preparation
- Preheat your oven to 450°F (232°C).
- Wrap the garlic cloves in aluminum foil, drizzle with olive oil, and roast for 20-25 minutes until golden brown.
- While the garlic is roasting, sauté the spinach in a pan over medium heat with a touch of olive oil for 2-3 minutes until wilted.
- Carefully unwrap the roasted garlic and mash the cloves in a bowl to make a paste.
- Roll out the pizza crust on a baking sheet or pizza stone. Spread the garlic paste evenly over it.
- Dollop and spread the ricotta cheese on top, followed by the sautéed spinach and mozzarella. Sprinkle with salt and pepper.
- Bake in the oven for 12-15 minutes until the edges are crispy and the cheese is bubbling.
- Cool for a couple of minutes, slice, and serve.
Notes
For an extra kick, consider adding feta or goat cheese, or incorporating other vegetables like artichokes or sun-dried tomatoes. Store leftovers in an airtight container for up to 3 days.
