Roasted Potatoes with Baked Feta and Garlic

Main Ingredients
  • 2 pounds baby potatoes, halved or quartered if you're feeling adventurous!
  • 1 block (8 ounces) feta cheese
  • 5 cloves garlic, unpeeled
  • 1/4 cup olive oil Don't skimp!
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, oregano, salt, and pepper until well coated.
  3. On a baking sheet, arrange the potatoes cut side down and nestle the block of feta in the middle. Add the unpeeled garlic cloves around the feta.
Cooking
  1. Slide the baking sheet into the preheated oven and roast for about 30-35 minutes, or until the potatoes are golden and the feta is soft and melty.
  2. Remove from the oven and let it cool for a minute. Gently smash the garlic cloves with the back of a fork.
  3. Mix the smashed garlic with the feta and drizzle a little more olive oil if desired. Top with fresh parsley before serving.

Notes

For variations, feel free to add spinach or cherry tomatoes. Leftovers taste incredible the next day and can be reheated gently.
