  • 2 pounds red potatoes, washed and cut into quarters
  • 6 slices bacon, chopped Because, bacon!
  • 1 medium onion, chopped (sweet or yellow) Your choice!
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary (dried or fresh)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) It's pretty!

Method
 

Preparation
  1. Preheat your oven to 400°F (about 200°C).
  2. In a large bowl, toss the quartered red potatoes with olive oil, garlic powder, rosemary, salt, and pepper until well coated.
  3. Add the chopped bacon and onion to the potato mixture and mix until evenly distributed.
  4. Spread the potato mixture evenly across a large baking sheet.
Cooking
  1. Pop the baking sheet into your preheated oven and roast for about 30–35 minutes, flipping the potatoes halfway through.
  2. Once beautifully golden brown and tender, remove from the oven and sprinkle with fresh parsley if desired.

Notes

Try adjusting the bacon and onion amounts to accommodate picky eaters. Leftovers can be reheated or added to breakfast dishes or salads. Darker edges are normal and add to the flavor.
