  • 1 pound 1 pound of your favorite sausages Italian, chicken, or plant-based
  • 1 large 1 large onion, sliced
  • 2 2 bell peppers, sliced Any colors you prefer
  • 1 pound 1 pound of baby potatoes, halved (or quartered if feeling ambitious)
Seasoning and oils
  • 3 tablespoons 3 tablespoons of olive oil
  • 1 teaspoon 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Optional: Fresh herbs like thyme or rosemary For extra flavor

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sausage, onions, bell peppers, and potatoes.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss well to combine.
  4. Spread the mixture onto a large baking sheet ensuring even distribution.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, until sausages are browned and potatoes are fork-tender. Stir halfway through.
  2. If using fresh herbs, sprinkle them on top right before serving.

Notes

This dish makes fantastic leftovers. Reheat in the oven for a few minutes to enjoy again.
