Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sausage, onions, bell peppers, and potatoes.
- Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss well to combine.
- Spread the mixture onto a large baking sheet ensuring even distribution.
Cooking
- Roast in the preheated oven for about 25-30 minutes, until sausages are browned and potatoes are fork-tender. Stir halfway through.
- If using fresh herbs, sprinkle them on top right before serving.
Notes
This dish makes fantastic leftovers. Reheat in the oven for a few minutes to enjoy again.
