  • 2 pieces bell peppers (any color) For a colorful presentation.
  • 1 medium onion (yellow or red) Adds sweetness and flavor.
  • 4 medium potatoes Yukon Gold preferred, feel free to substitute.
  • 2 tablespoons olive oil For roasting and flavor.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Chop the bell peppers, onion, and potatoes into bite-sized pieces.
  3. In a large bowl, toss the chopped veggies with olive oil, salt, and pepper until evenly coated.
  4. Nestle the sausages among the veggies on a large baking sheet.
Cooking
  1. Place the baking sheet in the preheated oven and roast for 25-30 minutes, tossing the veggies halfway through.
  2. Check for doneness; sausages should be browned and cooked through (165°F inside), and veggies should be caramelized.

Notes

For added spice, consider adding red pepper flakes. Great for leftovers—store in an airtight container for up to 3 days.
