Ingredients

For the Roasted Strawberries
  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons honey or maple syrup Adjust based on sweetness preference
  • 1 pinch salt To balance the sweet flavors
For the Whipped Ricotta
  • 1 cup ricotta cheese Use creamy ricotta for best results
  • 1 tablespoon honey Adjust based on how sweet you like it
  • 1 splash vanilla extract For additional flavor
For the Toast
  • 4 slices favorite bread (sourdough or whole grain)
  • 1 drizzle olive oil or a sprinkle of cinnamon Optional for added flavor

Method

Roasting the Strawberries
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss the halved strawberries with honey and sprinkle a pinch of salt.
  3. Roast them in the oven for about 15-20 minutes until they are soft and caramelized.
Whipping the Ricotta
  1. In a bowl, combine the ricotta cheese, honey, and vanilla extract.
  2. Whip it until smooth and creamy using a whisk or electric mixer.
  3. Taste the ricotta and adjust sweetness if necessary.
Toasting the Bread
  1. Toast your bread slices using a toaster, skillet, or grill.
  2. Once toasted, drizzle with olive oil or sprinkle with cinnamon if desired.
Assembling the Toast
  1. Spread a generous layer of whipped ricotta on each slice of toast.
  2. Top with the roasted strawberries, allowing their juices to mingle with the ricotta.
  3. Drizzle with additional honey or add fresh mint leaves if you're feeling fancy.

Notes

Adjust the sweetness to your preference and feel free to experiment with other toppings such as nuts or seeds. If the ricotta looks lumpy, it's all part of its charm!
