Preparation
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke them all over with a fork.
- Drizzle sweet potatoes with olive oil and sprinkle with salt and pepper.
Roasting
- Place sweet potatoes on a baking sheet and roast for 45-60 minutes.
Filling Preparation
- Combine diced apples, cranberries, brown sugar, cinnamon, and lemon juice in a bowl. Stir until coated.
Assembly
- Once potatoes are done, slice them open lengthwise and fluff insides with a fork.
- Stuff with apple-cranberry filling and enjoy!
- Optionally, pop them back in the oven for another 10 minutes to warm the filling.
Notes
You can prep the filling a day in advance. Substitute sweet potatoes with butternut or acorn squash if desired.
