Roasted Sweet Potatoes with Apple-Cranberry Filling

Ingredients
  

For the Sweet Potatoes
  • 4 medium medium-sized sweet potatoes
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
For the Apple-Cranberry Filling
  • 2 cups diced apples (preferably Honeycrisp) For sweetness
  • 1 cup dried cranberries
  • 2 tablespoons brown sugar A little sweetness goes a long way
  • 1 teaspoon cinnamon Adds a hint of spice
  • 1 tablespoon lemon juice To keep apples from browning

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke them all over with a fork.
  3. Drizzle sweet potatoes with olive oil and sprinkle with salt and pepper.
Roasting
  1. Place sweet potatoes on a baking sheet and roast for 45-60 minutes.
Filling Preparation
  1. Combine diced apples, cranberries, brown sugar, cinnamon, and lemon juice in a bowl. Stir until coated.
Assembly
  1. Once potatoes are done, slice them open lengthwise and fluff insides with a fork.
  2. Stuff with apple-cranberry filling and enjoy!
  3. Optionally, pop them back in the oven for another 10 minutes to warm the filling.

Notes

You can prep the filling a day in advance. Substitute sweet potatoes with butternut or acorn squash if desired.
