Ingredients
  

For the Meatballs
  • 1 pound ground beef (or your favorite ground meat) You can use ground turkey or chicken as a lighter option.
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • to taste seasoning Salt and pepper
For the Mushroom Gravy
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 teaspoon soy sauce
  • 1 teaspoon Dijon mustard
  • to taste seasoning Salt and pepper
  • optional garnish Fresh parsley For garnish before serving.

Method
 

Preparation
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, chopped onion, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined.
  2. Shape the mixture into 1-inch meatballs.
Cooking the Meatballs
  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Cook the meatballs in batches until they are browned on all sides. Remove from the pan and set aside.
Making the Gravy
  1. In the same skillet, add the sliced mushrooms and sauté until golden brown and tender.
  2. Sprinkle the flour over the mushrooms and cook for about a minute, stirring constantly.
  3. Gradually whisk in the beef broth, soy sauce, and Dijon mustard.
Combining and Simmering
  1. Return the meatballs to the skillet, nestling them gently in the gravy.
  2. Allow everything to come to a gentle simmer, then cover and cook for about 15-20 minutes until the meatballs are cooked through and the gravy thickens.
Serving
  1. Serve your Salisbury steak meatballs over mashed potatoes, noodles, or cauliflower rice.
  2. Garnish with fresh parsley if desired.

Notes

You can sneak veggies like grated zucchini or carrots into the meatball mixture. Leftover meatballs are even better the next day!
