Ingredients
  

For the Meatballs
  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese Freshly grated works best.
  • 1/4 cup chopped fresh parsley Can substitute with dried parsley.
  • 1 large egg Acts as a binder for the meatballs.
  • 1 teaspoon minced garlic Fresh minced or pre-minced.
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust based on preference.
For the Mushroom Gravy
  • 1 tablespoon olive oil For browning meatballs.
  • 1 cup sliced mushrooms Any variety works, use fresh for best flavor.
  • 1 cup beef broth Low sodium if preferred.
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons soy sauce Use low sodium if desired.
  • 1 tablespoon cornstarch To thicken the gravy.
  • 1 tablespoon cold water To mix with cornstarch.
  • to taste Fresh parsley for garnish Adds freshness to the dish.

Method
 

Prepare the Meatballs
  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, onion powder, salt, and pepper. Mix until just combined, avoiding overworking the mixture.
  2. Shape the mixture into 1-inch meatballs and set aside.
Brown the Meatballs
  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Add the meatballs, cooking them for about 6-8 minutes until browned on all sides.
Make the Gravy
  1. Remove the browned meatballs from the skillet and set aside.
  2. In the same skillet, add the sliced mushrooms and sauté for 5 minutes until tender.
Create the Sauce
  1. Pour in the beef broth, Worcestershire sauce, and soy sauce. Let it simmer for a few minutes.
  2. Whisk in the cornstarch mixture to thicken the gravy.
Combine and Cook
  1. Return the meatballs to the gravy, allowing everything to simmer together for another 10 minutes.
Garnish and Serve
  1. Sprinkle fresh parsley over the top and serve the meatballs over rice or mashed potatoes.

Notes

Make the meatballs in advance and store them in the fridge until ready. For picky eaters, add finely chopped veggies to the meatball mix and they will blend in with the flavors.
