Method
Prepare the Meatballs
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, onion powder, salt, and pepper. Mix until just combined, avoiding overworking the mixture.
- Shape the mixture into 1-inch meatballs and set aside.
Brown the Meatballs
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the meatballs, cooking them for about 6-8 minutes until browned on all sides.
Make the Gravy
- Remove the browned meatballs from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and sauté for 5 minutes until tender.
Create the Sauce
- Pour in the beef broth, Worcestershire sauce, and soy sauce. Let it simmer for a few minutes.
- Whisk in the cornstarch mixture to thicken the gravy.
Combine and Cook
- Return the meatballs to the gravy, allowing everything to simmer together for another 10 minutes.
Garnish and Serve
- Sprinkle fresh parsley over the top and serve the meatballs over rice or mashed potatoes.
Notes
Make the meatballs in advance and store them in the fridge until ready. For picky eaters, add finely chopped veggies to the meatball mix and they will blend in with the flavors.
