Ingredients
  

For the patties
  • 1 can (14.75 oz) wild-caught salmon, drained and flaked
  • 1/2 cup breadcrumbs (panko, if you’re feeling fancy!)
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped (red, yellow, or whatever you have on hand!)
  • 2 large eggs, beaten
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill or parsley
  • to taste Salt and pepper
  • as needed Olive oil for frying

Method
 

Preparation
  1. Gather and prep all of your ingredients.
Mixing
  1. In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, bell pepper, beaten eggs, Dijon mustard, garlic powder, dill, salt, and pepper. Mix until everything is evenly distributed.
Shaping
  1. Form the salmon mixture into patties, about the size of your palm.
Cooking
  1. In a large skillet, drizzle some olive oil and heat it over medium heat.
  2. Carefully add the patties to the pan, cooking in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and crispy.
Serving
  1. Once browned, transfer the patties to a paper towel-lined plate to drain excess oil. Serve warm with a squeeze of fresh lemon and your favorite dipping sauce.

Notes

Don’t skimp on the seasoning! Customize with other veggies or swap out salmon for tuna. Leftover mashed potatoes can be added for extra flavor and texture.
