Ingredients

For the Bread
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large apples, peeled, cored, and diced
For the Topping
  • 1 cup caramel sauce
  • 1 teaspoon sea salt for topping

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and butter a 9×5-inch loaf pan.
  2. In a large mixing bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Slowly add the dry ingredients to the wet mixture, alternating with the milk, and mix just until combined.
  6. Fold in the diced apples gently.
Baking
  1. Pour about half of the batter into the prepared loaf pan. Drizzle with half of the caramel sauce, then pour the remaining batter on top.
  2. Top with the rest of the caramel sauce and sprinkle sea salt over everything.
  3. Bake for 55-65 minutes, or until a toothpick comes out clean.
  4. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sauté diced apples in a bit of butter and sprinkle with brown sugar before adding to the batter. If the caramel sauce is lumpy, call it 'rustic charm'!
