Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup shredded cheese (cheddar or your favorite) Use your preferred type of cheese.
  • 1/2 cup diced ham
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter (melted) For added flavor and moisture.
  • to taste chopped chives or green onions (optional) For extra kick!

Preparation
  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, mix the milk and eggs until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until just combined—lumpy is okay!
  4. Add in the melted butter for extra flavor.
Add Ingredients
  1. Gently fold in the ham and shredded cheese.
  2. If you’re feeling fancy, toss in some chopped chives or green onions for a bit of flair.
Cooking
  1. Heat a non-stick skillet over medium heat. You can add a bit of melted butter to the pan if you like.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until small bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden and fluffy.
  4. Keep cooking until you’ve used all your batter.
Serving
  1. Serve warm with a drizzle of maple syrup or a side of eggs.

Notes

Make it a meal with scrambled eggs or fresh fruit. You can freeze leftovers and reheat in the toaster or microwave.
