- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the milk and eggs until well combined.
- Pour the wet mixture into the dry ingredients and stir until just combined—lumpy is okay!
- Add in the melted butter for extra flavor.
Add Ingredients
- Gently fold in the ham and shredded cheese.
- If you’re feeling fancy, toss in some chopped chives or green onions for a bit of flair.
Cooking
- Heat a non-stick skillet over medium heat. You can add a bit of melted butter to the pan if you like.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until small bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden and fluffy.
- Keep cooking until you’ve used all your batter.
Serving
- Serve warm with a drizzle of maple syrup or a side of eggs.
Notes
Make it a meal with scrambled eggs or fresh fruit. You can freeze leftovers and reheat in the toaster or microwave.
