  • 1 lb breakfast sausage Feel free to go lean if you’re watching your waistline!
  • 8 large eggs
  • 1/4 cup milk Optional, but makes the eggs creamier.
  • to taste Salt and pepper
  • 1 cup shredded cheese Your choice—cheddar, mozzarella, or pepper jack.
  • 4 large tortillas Whole wheat or flour.
  • Optional: diced vegetables Like bell peppers or spinach, to sneak in some extra nutrients!

Method
 

Cooking the Ingredients
  1. In a large skillet over medium heat, add the breakfast sausage. Break it into smaller pieces with a spatula and cook until brown and crispy—about 5-6 minutes. Drain excess fat if necessary.
  2. While the sausage is cooking, whisk together the eggs, milk (if using), salt, and pepper in a bowl. Set it aside.
  3. Push the cooked sausage to one side of the skillet. Pour the egg mixture into the empty side of the skillet. Let it sit for a few moments before stirring to create fluffy curds, then gently mix them together with the sausage. Add the cheese towards the end, allowing it to melt.
Assembling the Roll-Ups
  1. Warm your tortillas in another skillet or microwave them for about 20 seconds. Spoon a generous amount of the sausage and egg mixture onto each tortilla and roll them up tightly.
Serving
  1. Serve the roll-ups as-is, or with salsa, hot sauce, or sour cream.

Notes

Prep in advance by cooking the sausage and eggs the night before. Freeze for future use by wrapping each roll-up in foil and storing them in the freezer.
