Preparation
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, beat the milk, egg, and melted butter until combined.
- Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing!
- Fold in the cooked sausage and shredded cheese.
- Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
Baking
- Bake in the preheated oven for about 15-20 minutes, or until golden brown on top.
- Let them cool slightly before removing from the tin.
Serving
- Serve warm, optionally with maple syrup or spicy mustard.
Notes
For a straightforward morning, prepare the batter the night before and store in the fridge. Try adding diced vegetables or swapping the sausage for crispy bacon or ham.
