Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
Filling Ingredients
  • 1 cup cooked sausage, crumbled Or hot sausage for a kick!
  • 1/2 cup shredded cheddar cheese Optional, but recommended!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In a separate bowl, beat the milk, egg, and melted butter until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing!
  5. Fold in the cooked sausage and shredded cheese.
  6. Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, or until golden brown on top.
  2. Let them cool slightly before removing from the tin.
Serving
  1. Serve warm, optionally with maple syrup or spicy mustard.

Notes

For a straightforward morning, prepare the batter the night before and store in the fridge. Try adding diced vegetables or swapping the sausage for crispy bacon or ham.
