- In a large pot, brown the Italian sausage over medium heat, crumbling it as it cooks.
- Add the chopped onion, garlic, carrots, celery, and bell pepper. Sauté for about 5 minutes until slightly softened.
- Stir in the diced tomatoes (with their juices) and mix well. Let simmer for a minute.
- Add the chicken broth, diced potatoes, thyme, and paprika, and bring to a gentle boil.
- Reduce the heat and let the stew simmer for about 25-30 minutes, or until the potatoes are tender.
- Taste the stew and add salt and pepper as desired. Serve in bowls, garnishing with freshly chopped parsley if desired.
