  • 1 pound Italian sausage Use sweet or spicy depending on your mood.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups chicken broth
  • 2 medium potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt and pepper
  • as needed Fresh parsley for garnish Optional, but it makes everything look fancy!

Method
 

Preparation
  1. In a large pot, brown the Italian sausage over medium heat, crumbling it as it cooks.
  2. Add the chopped onion, garlic, carrots, celery, and bell pepper. Sauté for about 5 minutes until slightly softened.
  3. Stir in the diced tomatoes (with their juices) and mix well. Let simmer for a minute.
  4. Add the chicken broth, diced potatoes, thyme, and paprika, and bring to a gentle boil.
  5. Reduce the heat and let the stew simmer for about 25-30 minutes, or until the potatoes are tender.
  6. Taste the stew and add salt and pepper as desired. Serve in bowls, garnishing with freshly chopped parsley if desired.

Notes

This stew freezes well; make a big batch and reserve portions for busy nights. You can also switch up the sausage with chicken, turkey, or plant-based options.
