  • 1 pound green beans, trimmed fresh or frozen
  • 4 strips bacon, diced can substitute with turkey bacon for a lighter version
  • 1 cup mushrooms, sliced button or cremini, your choice
  • 2 tablespoons olive oil for added richness
  • 3 cloves garlic, minced for flavor
  • to taste salt and pepper for seasoning

Method

  1. In a large skillet over medium heat, add the diced bacon. Cook for about 5 minutes, or until it reaches a perfect crispy texture.
  2. Remove the bacon from the skillet and drain on a paper towel.
  3. In the remaining bacon drippings, add the sliced mushrooms and sauté for about 3-4 minutes until softened and golden brown.
  4. Add the green beans and minced garlic to the skillet, drizzle in the olive oil, sprinkle with salt and pepper, and stir. Sauté for about 5-7 minutes, or until the green beans are tender but still crunchy.
  5. Fold in the crispy bacon, taste, and adjust seasoning with additional salt and pepper if needed. Serve hot.

Notes

Feel free to add a dash of red pepper flakes for heat, or toss in bell peppers or cherry tomatoes for extra flavor. You can prepare the bacon and mushrooms in advance and sauté the green beans just before serving.
