- In a large skillet, heat the olive oil over medium heat.
- Add sliced onions and sauté for about 3-4 minutes until they start turning golden and tender.
- Toss in the sliced mushrooms and cook for another 4-5 minutes until they release their juices.
- Add minced garlic and sauté for about 1 minute.
- Add fresh spinach and season with salt and pepper. Cook until the spinach is wilted, about 2-3 minutes.
- Transfer to a serving dish and enjoy warm!
Notes
For added flavor, a splash of balsamic vinegar can elevate the dish. Feel free to substitute spinach with kale or add other veggies. Stores well for meal prep, lasting in the fridge for up to 3 days.
