Ingredients
  

Main Ingredients
  • 4 cups fresh spinach You can never have too much green.
  • 2 cups mushrooms, sliced Any variety works, but cremini is a fancy choice.
  • 1 medium onion, sliced Sweet or yellow; choice is yours.
  • 2 tablespoons olive oil For sautéing.
  • 1 clove garlic, minced Optional but adds great flavor.
  • to taste salt and pepper Essential for flavor.

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add sliced onions and sauté for about 3-4 minutes until they start turning golden and tender.
  3. Toss in the sliced mushrooms and cook for another 4-5 minutes until they release their juices.
  4. Add minced garlic and sauté for about 1 minute.
  5. Add fresh spinach and season with salt and pepper. Cook until the spinach is wilted, about 2-3 minutes.
  6. Transfer to a serving dish and enjoy warm!

Notes

For added flavor, a splash of balsamic vinegar can elevate the dish. Feel free to substitute spinach with kale or add other veggies. Stores well for meal prep, lasting in the fridge for up to 3 days.
