Ingredients
  

Vegetables
  • 2 medium zucchinis, sliced Choose fresh, firm zucchinis.
  • 8 ounces mushrooms, sliced Cremini or button mushrooms work well.
Condiments and Seasoning
  • 3 tablespoons olive oil Extra virgin olive oil recommended.
  • 2 cloves garlic, minced Adjust amount according to taste.
  • to taste salt Use sea salt or kosher salt.
  • to taste pepper Freshly ground for best flavor.
Garnish
  • to taste fresh herbs like parsley or basil Optional, for added flavor.

Method
 

Preparation
  1. Wash the zucchinis and mushrooms, then slice them.
Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced zucchini, cooking for 4-5 minutes until softened, stirring occasionally.
  3. Add the sliced mushrooms and continue cooking for another 5-7 minutes.
  4. Stir in the minced garlic, season with salt and pepper, and cook until everything is tender.
  5. If desired, add fresh herbs for an additional burst of flavor.
Serving
  1. Plate the sautéed zucchini and mushrooms and enjoy!

Notes

For the best results, avoid overcrowding the pan. Sauté in batches if necessary. Leftovers can be stored in an airtight container for up to 3 days. Best enjoyed fresh, but can be reheated or made ahead of time.
