Preparation
  1. In a large bowl, combine the ground beef, grated onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper. Use your hands to mix everything until just combined, avoiding overmixing.
  2. Grab a handful of the meat mixture (about the size of a golf ball) and form it around a skewer, pressing it into a long, oval shape, aiming for about 4-5 kebabs per skewer.
  3. Pop the formed kebabs in the refrigerator for about 30 minutes to help them hold their shape while cooking.
Grilling
  1. Preheat your grill (or stove top grill pan) over medium-high heat. Once hot, place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until browned and cooked through.
