- In a large bowl, combine the ground beef, grated onion, garlic, parsley, cumin, coriander, paprika, salt, and pepper. Use your hands to mix everything until just combined, avoiding overmixing.
- Grab a handful of the meat mixture (about the size of a golf ball) and form it around a skewer, pressing it into a long, oval shape, aiming for about 4-5 kebabs per skewer.
- Pop the formed kebabs in the refrigerator for about 30 minutes to help them hold their shape while cooking.
Grilling
- Preheat your grill (or stove top grill pan) over medium-high heat. Once hot, place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until browned and cooked through.
Serving
- Serve your savory beef kofta kebabs hot with pita bread, yogurt sauce, or a simple salad.
