  • 8 oz lo mein noodles or spaghetti Use spaghetti if lo mein noodles are hard to find.
  • 1 lb beef, thinly sliced Flank steak or sirloin works great.
  • 2 cups mixed vegetables Options include bell peppers, broccoli, and carrots.
  • 3 tablespoons soy sauce The secret to umami magic.
  • 2 cloves garlic, minced Adds flavor.
  • 1 tablespoon ginger, minced Adds a lovely zing.
  • 2 tablespoons vegetable oil For sautéing.
  • 1 tablespoon sesame oil For a nutty finish.
  • to taste Salt and pepper To season the beef.

Preparation
  1. Cook the noodles according to the package instructions. Once al dente, drain and set aside.
  2. Toss the cooked noodles with a little sesame oil to prevent sticking.
Cooking
  1. In a large skillet or wok, heat vegetable oil over medium-high heat. Add thinly sliced beef, season with salt and pepper, and stir-fry until browned, about 3-5 minutes. Remove beef and set aside.
  2. In the same skillet, add minced garlic and ginger, then quickly add mixed vegetables. Stir-fry for about 3-4 minutes until tender-crisp.
  3. Add cooked beef back to the skillet, along with noodles, soy sauce, and sesame oil. Toss to combine and cook for an additional 2-3 minutes until heated through.
  4. Taste and adjust seasoning, adding more soy sauce or crushed red pepper if desired.
Serving

Notes

Feel free to swap in any leftover or preferred vegetables. For a healthier option, substitute beef with chicken, shrimp, or tofu.
