Ingredients
  

For the Dough
  • 2 cups all-purpose flour (plus extra for dusting) Use extra for dusting the surface.
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • ¾ cup warm milk Ensure it's not too hot, or you'll kill the yeast.
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter Melted
  • 1 large egg
For the Filling
  • 1 cup shredded cheese Cheddar, mozzarella, or your favorite!
  • ½ cup cooked spinach Squeeze out the excess moisture.
  • ½ cup diced cooked bacon or sausage Optional but oh-so-good.
  • a pinch garlic powder Because who doesn’t love garlic?
For the Topping
  • 1 tablespoon melted butter For brushing.
  • Sesame seeds or herbs For a pretty finish.

Method
 

Preparation
  1. In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes, or until it gets frothy.
  2. In a large mixing bowl, combine flour and salt. Create a well in the center, then add the melted butter, egg, and yeast mixture. Mix until a dough forms. If it’s too sticky, sprinkle in a little more flour.
  3. On a floured surface, knead the dough for about 5-7 minutes until it’s smooth and elastic. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about an hour, or until it doubles in size.
Assembly
  1. Once the dough has risen, punch it down. Roll it out into a rectangle about ¼ inch thick.
  2. Spread your fillings: sprinkle the cheese, cooked spinach, and any optional meats evenly over the dough. Roll it up tightly.
  3. Cut the rolled dough into 1-inch pieces and place them in a greased baking dish. Let them rise again for about 30 minutes.
Baking
  1. Preheat your oven to 375°F (190°C). Brush the rolls with melted butter and sprinkle some sesame seeds or herbs on top.
  2. Bake for 20-25 minutes or until they are golden brown.

Notes

Make-Ahead Magic: Shape rolls a day before and place them in the fridge overnight. Let them rise for about 30 minutes before baking. Customize fillings as desired!
