  • 1 cup milk
  • 2 large eggs

  • 1 cup caramelized onions (about 2 large onions) Prepare by cooking onions in oil until golden and sweet.
  • 1 cup cooked turkey lardons Can substitute with bacon if desired.
  • Fresh herbs Fresh herbs (like thyme or parsley) for garnish Optional for serving.
  • Grated cheese A sprinkle of grated cheese for extra indulgence Optional.

Method
 

Preparation
  1. Start by heating about a tablespoon of oil in a skillet over medium heat. Add your sliced onions and a pinch of salt. Stir occasionally for about 20-25 minutes until they’re golden brown and deliciously sweet.
  2. While your onions are caramelizing, cut the turkey into small lardon-sized pieces and cook them until crispy. Set them aside on a paper towel to drain.
Mixing Ingredients
  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, whisk the eggs, oil, and milk until smooth. Combine the wet mixture with the dry ingredients and stir until just combined.
  3. Gently fold in the caramelized onions and turkey lardons, then pour the mixture into a greased cake pan and smooth the top.
Baking
  1. Pop it in a preheated oven at 350°F (175°C) and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool for a few minutes before slicing and serving.
Serving
  1. If desired, sprinkle fresh herbs and a touch of cheese on top right before serving.

Notes

Feel free to experiment with different cheeses or add a spice kick with a pinch of chili flakes to the batter before baking.
