Ingredients
  

For the chicken filling
  • 1 lb ground chicken Turkey can also be used.
  • 1 cup shiitake mushrooms, finely chopped Any mushrooms can be used.
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce Use tamari for gluten-free.
  • 1 tablespoon hoisin sauce Adds sweetness.
  • 1 tablespoon sesame oil For flavor.
  • 2 pieces green onions, chopped
  • 1 head iceberg or butter lettuce For serving.
  • Optional toppings: sliced carrots, cilantro, and chopped peanuts
For the Thai chili sauce
  • 3 tablespoons Thai chili sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar Adjust for sweetness.

Method
 

Cooking the Chicken Filling
  1. In a large skillet, heat up the sesame oil over medium heat. Add the minced garlic and ginger, cooking for about 30 seconds.
  2. Add the ground chicken and chopped mushrooms to the pan. Stir-fry until the chicken is cooked through and golden brown, about 5–7 minutes.
  3. Stir in the soy sauce and hoisin sauce, allowing it to simmer for a couple of minutes.
  4. Add the chopped green onions into the mix, stir-fry for another minute, and remove the skillet from heat.
Preparing Lettuce Cups and Sauce
  1. Gently separate the leaves of the lettuce for scooping.
  2. In a small bowl, mix together the Thai chili sauce, lime juice, and sugar, adjusting to your taste.
Assembling the Wraps
  1. Spoon the chicken mixture into each lettuce leaf, drizzle with Thai chili sauce, and add your desired toppings.

Notes
