Preparation
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken thighs and sear until golden brown, about 5 minutes per side.
- Remove chicken from the skillet and set aside.
Cooking
- In the same skillet, add apple cider, scraping up any browned bits from the bottom.
- Stir in heavy cream, Dijon mustard, and thyme. Bring to a simmer.
- Add sliced apples to the sauce and return chicken to the skillet.
- Transfer skillet to the preheated oven and bake for 30-35 minutes, until chicken is cooked through and juices run clear.
Serving
- Remove from the oven and let rest for a few minutes before serving.
- Serve the chicken with the sauce and apples over rice or mashed potatoes.

This dish pairs well with a side salad. Leftovers can be stored in the refrigerator for up to 3 days.
