Roasting the Vegetables
- Preheat your oven to 400°F (200°C).
- Toss the sliced mushrooms and sweet onions in a bowl with olive oil, salt, and pepper.

Assembling the Sandwich
- On one slice of bread, layer a generous amount of shredded Gouda.
- Add some of the roasted mushrooms and onions.
- Top with another slice of bread.
Grilling the Sandwich
- Heat a skillet over medium heat and add a little more olive oil or butter.
- Once hot, add your assembled sandwich.
- Grill for about 3-4 minutes per side until the bread is golden brown and the cheese is melted.
- Optionally, add a splash of balsamic vinegar to enhance the flavors.
Serving
- Carefully remove the sandwich from the skillet.
- Let it rest for a minute before slicing in half.
