Ingredients
  

For the Sandwich
  • 4 slices slices of your favorite bread Sourdough or whole grain works well.
  • 1 cup Gouda cheese, shredded More cheese adds more flavor!
  • 1 cup mushrooms, sliced Any variety you have on hand will do.
  • 1 sweet onion, thinly sliced
  • 2 tablespoons olive oil Extra for grilling as needed.
  • Salt and pepper, to taste
  • Optional: a splash of balsamic vinegar For an extra flavor kick.

Method
 

Roasting the Vegetables
  1. Preheat your oven to 400°F (200°C).
  2. Toss the sliced mushrooms and sweet onions in a bowl with olive oil, salt, and pepper.
  3. Spread them out on a baking sheet and roast for about 15-20 minutes or until they’re golden brown and caramelized.
Assembling the Sandwich
  1. On one slice of bread, layer a generous amount of shredded Gouda.
  2. Add some of the roasted mushrooms and onions.
  3. Top with another slice of bread.
Grilling the Sandwich
  1. Heat a skillet over medium heat and add a little more olive oil or butter.
  2. Once hot, add your assembled sandwich.
  3. Grill for about 3-4 minutes per side until the bread is golden brown and the cheese is melted.
  4. Optionally, add a splash of balsamic vinegar to enhance the flavors.
Serving
  1. Carefully remove the sandwich from the skillet.
  2. Let it rest for a minute before slicing in half.
  3. Enjoy your savory gouda grilled cheese!

Notes

Don't skimp on the cheese for maximum flavor! Keep an eye on the heat while grilling to achieve perfect crispiness. Feel free to mix in some spinach or tomatoes for variation.
