Ingredients
  

For the pinwheels
  • 1 cup mushrooms, finely chopped Any type of mushroom works.
  • 1 cup shredded cheese (any melty kind) Cheddar, mozzarella, or goat cheese can be used.
  • 1 package puff pastry, thawed Use store-bought for convenience.
  • 2 tablespoons olive oil For sautéing.
  • 1 clove garlic, minced Enhances flavor.
  • to taste salt and pepper For seasoning.
  • 1 large egg, beaten For egg wash to create a golden finish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for 30 seconds.
  3. Add chopped mushrooms, sprinkle with salt and pepper, and cook for 5-7 minutes until soft and golden.
  4. In a bowl, mix sautéed mushrooms with shredded cheese until well combined.
  5. On a floured surface, roll out puff pastry to about ¼ inch thick.
  6. Spread the mushroom and cheese mixture evenly over the pastry, then roll tightly into a log.
  7. Slice the log into 1-inch pinwheels.
Baking
  1. Place pinwheels on the prepared baking sheet, brush tops with beaten egg, and bake for 15-20 minutes until golden brown.
  2. Allow the pinwheels to cool for a minute before serving.

Notes

Feel free to substitute mushrooms with spinach or roasted peppers for variations. Pinwheels can also be made ahead and frozen before baking.
