Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for 30 seconds.
- Add chopped mushrooms, sprinkle with salt and pepper, and cook for 5-7 minutes until soft and golden.
- In a bowl, mix sautéed mushrooms with shredded cheese until well combined.
- On a floured surface, roll out puff pastry to about ¼ inch thick.
- Spread the mushroom and cheese mixture evenly over the pastry, then roll tightly into a log.
- Slice the log into 1-inch pinwheels.
Baking
- Place pinwheels on the prepared baking sheet, brush tops with beaten egg, and bake for 15-20 minutes until golden brown.
- Allow the pinwheels to cool for a minute before serving.
Notes
Feel free to substitute mushrooms with spinach or roasted peppers for variations. Pinwheels can also be made ahead and frozen before baking.
