  • 1 lb top sirloin steak, thinly sliced You can substitute with chicken, shrimp, or tofu.
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil Add more if needed for cooking veggies.
  • 1 medium bell pepper, sliced Any color works.
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, freshly grated
  • 3 tbsp oyster sauce
  • 1 tbsp sesame oil
  • to serve none Cooked rice or noodles For serving.

Method
 

Preparation
  1. In a mixing bowl, toss your sliced steak with soy sauce and cornstarch. Let it sit for about 10-15 minutes while you prep the veggies.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the marinated steak to the pan in a single layer. Let it cook for about 2-3 minutes without stirring.
  3. Once cooked, remove the beef from the skillet and set it aside.
  4. Add a splash more oil if needed, then toss in the bell pepper, onion, garlic, and ginger. Stir-fry for about 4-5 minutes until the veggies are tender-crisp.
  5. Return the steak to the pan and add the oyster sauce and sesame oil. Stir everything together, cooking for another minute or two until heated through.
Serving
  1. Spoon your beautifully vibrant stir-fry over cooked rice or noodles. Enjoy!

Notes

If you're short on time, buy pre-sliced steak from the butcher. Feel free to experiment with different veggies such as snow peas, broccoli, or baby corn. Don't worry if your sauce looks a little lumpy; it's all part of the magic!
