  • 1 pound corned beef, chopped
  • 2 cups sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup rye bread, torn into pieces
  • 1/2 cup thousand island dressing or any dressing of your choice
  • 1/4 cup green onions, sliced
  • 2 tablespoons butter, melted
  • Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish and set it aside.
  3. Spread the sauerkraut evenly across the bottom of the prepared dish.
  4. Sprinkle half of the chopped corned beef on top, followed by half of the shredded Swiss cheese.
  5. Sprinkle the torn rye bread pieces over the cheese.
  6. Repeat the layers with the remaining corned beef and cheese.
  7. Pour the thousand island dressing evenly over the top and sprinkle with sliced green onions.
  8. Drizzle the melted butter over everything.
  9. Add salt and pepper to taste and gently press down the layers.
Baking
  1. Bake for about 25-30 minutes, or until the cheese is bubbly and golden.
  2. Once cool enough to handle, cut into squares and serve with an additional drizzle of thousand island dressing on the side.

Notes

This dish reheats beautifully, so feel free to make it ahead of time or enjoy leftovers! You can substitute corned beef for pastrami or turkey for a twist.
