  • 1 cup shredded cheddar cheese Use sharp cheddar for more flavor.
  • 1 cup cooked bacon, crumbled You can substitute with sautéed mushrooms for a vegetarian option.
  • 1/4 cup green onions, chopped Use both green and white parts for more flavor.
  • 1 tsp garlic powder
  • 1/2 tsp paprika Optional: smoked paprika for a different taste.

Preparation
  1. Preheat your oven to 375°F (190°C). Slice each jalapeño in half lengthwise and carefully remove the seeds. Wear gloves if you're sensitive to heat.
Make the Filling
  1. In a large bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions, garlic powder, paprika, and a sprinkle of salt and pepper. Mix until everything is well combined.
Stuff the Peppers
  1. Using a butter knife or small spoon, generously fill each jalapeño half with the cheesy filling.
Bake
  1. Place the stuffed jalapeños on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, until the peppers are tender and the tops are golden-brown.

Notes

You can prepare the filling in advance and stuff the jalapeños right before baking. For flavor variations, try different types of cheese or spices.
