Cooking Steps
  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the ground chicken and cook until browned and no longer pink, breaking it apart with a spatula.
  3. Add the minced garlic and grated ginger, sauté for about a minute until fragrant.
  4. Stir in the diced bell peppers and water chestnuts, cooking for an additional 3-4 minutes until softened.
  5. In a small bowl, mix together the soy sauce, lime juice, and brown sugar, then pour over the chicken mixture. Stir well and simmer for another 2-3 minutes.
  6. Spoon the chicken mixture into the lettuce leaves, and top with chopped green onions and cilantro.

Make sure your lettuce leaves are whole and intact for easy wrapping. Experiment with adding other crunchy vegetables like carrots or shredded cabbage. Store any leftover filling separately from the lettuce leaves to keep them crisp.
