Ingredients
  

For the Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups milk
  • 2 tablespoons melted butter
  • 1 pinch salt
For the Filling
  • 1 cup shredded turkey (leftovers are perfect!)
  • 1 cup shredded Swiss cheese
  • 1 cup fresh spinach (or your favorite greens)
  • 1 teaspoon Dijon mustard (if you’re feeling fancy!)
  • to taste Salt and pepper
For Serving
  • Fresh herbs for garnish (parsley or chives work great)

Method
 

Make the Crepe Batter
  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until you achieve a smooth batter. Let it rest for about 30 minutes.
Cook the Crepes
  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Pour about a ¼ cup of batter into the skillet, tilting it to spread the batter evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for an additional minute.
  3. Repeat with the remaining batter.
Prepare the Filling
  1. Combine the shredded turkey, Swiss cheese, spinach, mustard, salt, and pepper in a bowl. Mix it well.
Assemble the Crepes
  1. Place a generous spoonful of the filling on one side of each crepe, roll it up tightly.
Serve and Enjoy
  1. Garnish with fresh herbs and serve while warm.

Notes

These crepes are best enjoyed fresh but can be reheated if you have leftovers. If you're planning a busy week, you can prep the crepes in advance and store them in the fridge, layered with parchment paper to avoid sticking. You can also substitute turkey with shredded chicken or a veggie mix like mushrooms and zucchini. Flipping crepes can be intimidating, so use a spatula or a wide turner if needed.
