  • 1 pound fresh sea scallops You can substitute with shrimp or firm fish fillets.
  • 1 cup sliced mushrooms Button or cremini mushrooms work well.
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese Can add Gruyère cheese for added flavor.
  • 1/4 cup breadcrumbs Toast in butter for extra crunch.
  • 2 tablespoons butter One tablespoon for sautéing mushrooms, one for topping.
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced mushrooms and garlic, and sauté until golden brown, about 5 minutes.
  3. Pat dry the scallops with paper towels and sprinkle them with salt and pepper.
  4. In a greased baking dish, spread the sautéed mushrooms evenly, then nestle the scallops on top.
  5. Pour the heavy cream over everything, letting it seep into the crevices.
  6. Sprinkle the Parmesan cheese on top, followed by the breadcrumbs and the remaining tablespoon of butter.
Baking
  1. Bake the dish for about 20 minutes, or until the scallops are opaque and the crust is golden brown.
Serving
  1. Sprinkle fresh parsley over the top and serve immediately.

Notes

You can prepare everything a day prior and bake just before serving. Leftovers can be stored in an airtight container in the fridge for about 2 days. Reheat in the oven.
