Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced mushrooms and garlic, and sauté until golden brown, about 5 minutes.
- Pat dry the scallops with paper towels and sprinkle them with salt and pepper.
- In a greased baking dish, spread the sautéed mushrooms evenly, then nestle the scallops on top.
- Pour the heavy cream over everything, letting it seep into the crevices.
- Sprinkle the Parmesan cheese on top, followed by the breadcrumbs and the remaining tablespoon of butter.
Baking
- Bake the dish for about 20 minutes, or until the scallops are opaque and the crust is golden brown.
Serving
- Sprinkle fresh parsley over the top and serve immediately.
Notes
You can prepare everything a day prior and bake just before serving. Leftovers can be stored in an airtight container in the fridge for about 2 days. Reheat in the oven.
