For the Gratin
  • 1 lb fresh seafood (like shrimp, scallops, and crabmeat) Feel free to substitute with your favorite seafood.
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup heavy cream For an extra creamy texture, consider adding cream cheese.
  • 1 cup grated cheese (Swiss or Gruyère) Experiment with other cheeses like mozzarella or parmesan.
  • 1/2 cup breadcrumbs Panko breadcrumbs can add extra crunch.
  • to taste salt and pepper
  • optional splash of white wine Adds a nice zing!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  3. Gently fold in the fresh seafood and cook until just opaque, about 3-4 minutes. Optionally add a splash of white wine and let it cook off for about a minute.
  4. Pour in the heavy cream, season with salt and pepper, and let it simmer for a couple of minutes. Stir in half of the grated cheese until melted and combined.
  5. Transfer the seafood mixture into a baking dish. Top with the remaining cheese and sprinkle breadcrumbs on top.
  6. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and bubbly.
  7. Garnish with fresh parsley and serve with a side salad or crusty bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently in the oven.
