  • 1 pound fresh sea scallops
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 juice of lemon Freshly squeezed for best flavor
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped For garnish

Method
 

Preparation
  1. If you opted for frozen scallops, make sure they’re fully thawed, drained, and patted dry with a paper towel.
  2. Sprinkle your scallops with a pinch of salt and pepper.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Carefully place the scallops in the skillet, leaving space between them. Let them sear for about 2-3 minutes on each side until golden brown.
  3. Add the minced garlic to the pan and stir for about 30 seconds until fragrant.
  4. Squeeze the fresh lemon juice over the scallops and cook for an additional minute.
Serving
  1. Plate the scallops and sprinkle with fresh parsley. Serve over garlic butter noodles, a salad, or alone.

Notes

Don't overcrowd the pan to ensure scallops sear properly. Store leftovers in an airtight container in the fridge for up to 2 days.
