Preparation
- If you opted for frozen scallops, make sure they’re fully thawed, drained, and patted dry with a paper towel.
- Sprinkle your scallops with a pinch of salt and pepper.
Cooking
- In a large skillet, heat the olive oil over medium-high heat.
- Carefully place the scallops in the skillet, leaving space between them. Let them sear for about 2-3 minutes on each side until golden brown.
- Add the minced garlic to the pan and stir for about 30 seconds until fragrant.
- Squeeze the fresh lemon juice over the scallops and cook for an additional minute.
Serving
- Plate the scallops and sprinkle with fresh parsley. Serve over garlic butter noodles, a salad, or alone.
Notes
Don't overcrowd the pan to ensure scallops sear properly. Store leftovers in an airtight container in the fridge for up to 2 days.
