- Preheat your oven to 425°F (220°C). Slice the lobster tails down the middle and place them on a baking sheet, flesh facing up. Drizzle with a little olive oil, sprinkle with salt and pepper, and pop them in the oven for about 8-10 minutes or until the meat is opaque and tender.
- While the lobster is in the oven, heat a large skillet over medium-high heat and add olive oil. Season the scallops with salt and pepper and add them to the skillet. Cook for about 2-3 minutes on each side until they’re golden brown.
- During the last minute of cooking the scallops, add in the minced garlic. Then, melt in the butter, allowing it to froth up, and drizzle the lemon juice over everything. Stir to combine.
- On a beautiful plate, lay down the seared scallops, top with the perfectly cooked lobster, and finish with a sprinkle of lemon zest and fresh parsley.

Timing is crucial for the scallops; overcooking them can lead to a rubbery texture. You can substitute lobster with shrimp or even chicken. Don’t skimp on the butter as it enhances the flavor significantly.
