- Pat the scallops dry with a paper towel and season both sides with salt and pepper.
Cooking
- In a large skillet over medium-high heat, add olive oil and let it shimmer.
- Add the scallops in a single layer and sear without moving them for about 2-3 minutes per side.
- Once golden, remove scallops from the skillet and set aside.
- In the same pan, add minced garlic and stir for about a minute until fragrant.
- Pour in white wine (or broth) and let it simmer for about 2 minutes.
- Add heavy cream, stir until smooth, and adjust seasoning with salt and pepper.
- Return scallops to the skillet to warm through, garnish with parsley and lemon juice.
Notes
Avoid crowding the pan for even searing; shrimp can be used as a substitute for scallops. Serve over pasta, rice, or salad for a complete meal.
