Preparation
- Preheat your oven to 400°F (about 200°C).
- In a large mixing bowl, toss together the diced sweet potatoes, bell peppers, red onion, and sausage.
- Drizzle the olive oil over the top, followed by the garlic powder, paprika, salt, and pepper. Mix until everything is evenly coated.
- Spread the mixture in a single layer on a large baking sheet.
Roasting
- Pop the baking sheet into the oven and roast for about 25-30 minutes. Stir halfway through for even cooking.
- Once the sweet potatoes are tender and caramelized and the sausage is slightly browned, remove from the oven.
Serving
- Serve it hot right from the sheet pan to the table, and optionally sprinkle fresh parsley on top for garnish.
Notes
Feel free to add seasonal vegetables or adjust the spices. For a kick, consider adding cayenne pepper. Leftovers can be used in wraps or salads.
