Cooking Steps
- In a large skillet, add the olive oil and butter on medium heat. As the butter melts, your kitchen will start smelling amazing.
- Add the minced garlic and red pepper flakes to the pan. Sauté for about 1 minute until fragrant.
- Toss in the shrimp and mussels. Season with salt and pepper, then cover the skillet with a lid. Cook for about 5-7 minutes or until the mussels open (discard any that don’t).
- Pour the heavy cream over the seafood and stir gently to combine. Let it simmer for another 2-3 minutes until it thickens slightly.
- Sprinkle with fresh parsley before serving to add a lovely pop of color and flavor.
Notes
If you’re not a fan of mussels, feel free to substitute with clams or add sautéed scallops. You can use half-and-half or coconut cream as a substitute for heavy cream. Store leftovers in an airtight container in the fridge for about 2 days.
