Ingredients
  

For the Shrimp
  • 1 pound fresh or frozen shrimp, peeled and deveined choose wild-caught if you can!
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Mango Salsa
  • 1 ripe mango, diced
  • 1/2 cup red onion, finely chopped
  • 1 medium red bell pepper, diced
  • 1 medium jalapeño, seeds removed and finely chopped (optional for a kick!)
  • 1 tablespoon Juice of lime
  • Salt to taste
  • 1 handful fresh cilantro, chopped
For the Creamy Cilantro Sauce
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon Juice of lime
  • 1 handful fresh cilantro, chopped
  • Salt and pepper to taste
For Serving
  • Corn or flour tortillas
  • Lime wedges for squeezing
  • Extra cilantro for garnish

Method
 

Preparation
  1. If your shrimp are frozen, give them a good rinse with cold water and let them thaw. Pat them dry with paper towels.
  2. In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, salt, and pepper.
Cooking
  1. Heat a skillet over medium-high heat. When it’s hot, add the shrimp in a single layer.
  2. Cook for about 2-3 minutes on each side until they turn pink and opaque.
Mango Salsa
  1. In a bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), lime juice, and a sprinkle of salt.
  2. Toss gently, and then fold in the fresh cilantro.
Creamy Sauce
  1. In a separate bowl, mix together the Greek yogurt (or sour cream), mayonnaise, lime juice, chopped cilantro, salt, and pepper.
Assembly
  1. Warm your tortillas for about 30 seconds on a dry skillet.
  2. Place a few shrimp on each tortilla, top with mango salsa, drizzle with creamy cilantro sauce, and add extra cilantro.
  3. Finish it off with a squeeze of lime.

Notes

You can easily swap shrimp for grilled chicken or black beans. Feel free to add diced avocados or jalapeños to the salsa for added flavor. If you have leftover mango salsa, it makes a great topping for grilled chicken or fish.
