Ingredients
  

Seafood
  • 1 lb fresh white fish (like cod or halibut), cut into chunks Use the freshest seafood for the best flavor.
  • 1 lb shrimp, peeled and deveined
Vegetables
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, chopped
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tablespoon tomato paste
Broth and Seasoning
  • 3 cups fish or vegetable broth
  • 1 teaspoon red pepper flakes Adjust to taste.
  • to taste Salt and pepper
Garnish
  • to taste Fresh parsley, chopped For garnish.
  • to taste Lemon wedges For serving.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and red bell pepper. Sauté for about 5 minutes, or until the veggies are soft.
Cooking
  1. Stir in the diced tomatoes, tomato paste, and the red pepper flakes. Let this simmer for another 5 minutes.
  2. Add the fish or vegetable broth to the pot. Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat and let it bubble gently for about 10 minutes.
  3. Gently add the fish chunks and shrimp to the pot. Cover and let it simmer for another 5-7 minutes, until the fish is cooked through and the shrimp turns pink.
  4. Taste one last time for seasoning and adjust if necessary. Serve hot, garnished with fresh parsley and lemon wedges.

Notes

Don’t skimp on the freshness of the seafood. You can substitute any firm fish varieties or even add cooked pasta for a heartier meal.
