  1. Pat the scallops dry with a paper towel to achieve better caramelization when searing. Season with salt and pepper to taste.
Make the Zesty Lime Cilantro Sauce
  1. In a mixing bowl, combine the lime juice, chopped cilantro, minced garlic, honey, and jalapeño (if using). Stir until well combined and set aside.
Cooking
  1. Heat olive oil in a medium skillet over medium-high heat. When hot, add the scallops carefully and cook for about 2-3 minutes on each side until golden brown and opaque in the center.
  2. Do not overcrowd the pan to allow for proper searing.
Serving
