Ingredients
  

Vegetables
  • 2 medium zucchini, sliced
  • 8 oz mushrooms, sliced Button mushrooms work well!
Other Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Because who doesn’t love garlic?
  • to taste salt and pepper
  • 1 teaspoon Italian seasoning Or your favorite herb blend
  • optional Grated Parmesan cheese For a finishing touch

Method
 

Cooking Steps
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add sliced mushrooms and sauté for about 3-4 minutes until they start to brown.
  3. Add sliced zucchini and cook for an additional 5-6 minutes, stirring occasionally.
  4. Stir in minced garlic, salt, pepper, and Italian seasoning, and sauté for another minute until the garlic is fragrant.
  5. If desired, sprinkle grated Parmesan over the top before serving.

Notes

Feel free to add other vegetables like bell peppers or cherry tomatoes. Store leftovers in an airtight container in the fridge for up to three days. This dish can also be turned into a delightful pasta or grain bowl later in the week.
