For the Beef Roast
  • 4-5 pounds beef roast (chuck roast works wonders)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup cranberry juice
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary (fresh is fantastic, but dried will do)
For Serving (Optional)
  • Fresh parsley, chopped, for garnish

Method
 

Searing the Beef
  1. Preheat your oven to 300°F (150°C). Season the beef roast generously with salt and pepper.
  2. In a large, oven-safe pot, heat the olive oil over medium-high heat. Sear the roast on all sides until it’s beautifully browned.
The Aromatic Duo
  1. Remove the beef from the pot and set it aside. Add the chopped onions and garlic, sauté until soft and fragrant.
Building Flavor
  1. Add the beef broth, cranberry juice, balsamic vinegar, brown sugar, thyme, and rosemary to the pot. Stir well.
Braising Magic
  1. Return the beef roast to the pot, nestling it into the liquid. Cover with a lid and place it in the oven.
  2. Let it braise for 3 to 4 hours until fork-tender.
Final Touches
  1. Remove from the oven and if desired, transfer the liquid to a saucepan and simmer until it reduces.
  2. Slice the beef, drizzle with the glaze, and garnish with fresh parsley.

Notes

Keep it Low and Slow: Don't rush this dish. Braising allows deep flavors to develop. Leftovers can be stored in an airtight container for up to 3 days.
