  • 1.5 lbs beef chuck roast, cut into chunks
  • 4 cups beef broth Store-bought or homemade
  • 1 cup soy sauce Can substitute with tamari for gluten-free
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 2 cups sliced mushrooms (shiitake or your favorite)
  • 4 servings ramen noodles
  • to taste soft-boiled eggs Optional, for garnish

Cooking Steps
  1. In a skillet over medium-high heat, add a bit of oil and sear the beef chunks until browned on all sides.
  2. In your slow cooker, add the seared beef, beef broth, soy sauce, minced garlic, grated ginger, brown sugar, and sesame oil. Stir to mix.
  3. Toss in the sliced mushrooms. Consider adding spinach or bok choy for extra veggies.
  4. Cover your slow cooker and set it on low for 6-8 hours, or high for 4-5 hours.
  5. Once the beef is tender, cook the ramen noodles according to the package instructions, then drain and add to individual bowls.
  6. Ladle the slow-cooked beef and broth over the noodles, top with sliced green onions, and add soft-boiled eggs if desired.

Notes

You can use store-bought broth, leftover beef, or substitute chicken if you prefer. Adding seasonal veggies is encouraged.
