Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup sliced mushrooms button or cremini are great choices
  • 1/2 cup Marsala wine the star of the show
  • 1 cup chicken broth
  • 1/2 cup heavy cream for that cozy richness
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method

Preparation
  1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and thyme.
Searing (Optional)
  1. If you have extra time, heat olive oil in a pan over medium heat. Add the seasoned chicken breasts and sear them for about 3-4 minutes on each side until they’re golden brown. You can skip this step if you're in a rush.
Layering Ingredients
  1. Place the chicken breasts into your slow cooker. Top them with mushrooms, then pour over the Marsala wine and chicken broth. Stir gently to mix.
Slow Cooking
  1. Cover and set your slow cooker on low for about 6-7 hours or high for 3-4 hours.
Finishing Touches
  1. Once the chicken is cooked through and tender, add the heavy cream and stir. Let it cook for another 30 minutes.
Serving
  1. Serve your Chicken Marsala over rice, pasta, or mashed potatoes and garnish with fresh parsley.

Notes

If Marsala isn’t available, substitute with other sweet wines like sherry or a sweet red. Feel free to experiment with different varieties of mushrooms or even double the amount for mushroom lovers. If the sauce looks lumpy, just stir, and it will turn out delicious.
