Ingredients
  

Main Ingredients
  • 2 pounds boneless, skinless chicken thighs
  • 1 cup honey
  • ½ cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger or ground ginger if you’ve run out
  • 4 cups mixed vegetables (such as broccoli, bell peppers, and carrots)
  • 1 tablespoon sesame oil for extra flavor
  • 2 stalks green onions, chopped for garnish

Method
 

Preparation
  1. Place the boneless, skinless chicken thighs at the bottom of your slow cooker.
Make the Sauce
  1. In a mixing bowl, combine the honey, soy sauce, minced garlic, and ginger. Whisk until well combined.
Cooking
  1. Pour the sauce over the chicken in the slow cooker, ensuring each piece is coated.
  2. Add in the mixed vegetables.
  3. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
Finishing Touches
  1. When cooking time is up, chop the green onions and sprinkle them over the dish before serving.

Notes

For thicker sauce, remove the chicken and veggies after cooking, then add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the slow cooker and cook on high for another 10-15 minutes. Leftover veggies can be substituted into the recipe as desired.
