Preparation
- Place the boneless, skinless chicken thighs at the bottom of your slow cooker.
Make the Sauce
- In a mixing bowl, combine the honey, soy sauce, minced garlic, and ginger. Whisk until well combined.
Cooking
- Pour the sauce over the chicken in the slow cooker, ensuring each piece is coated.
- Add in the mixed vegetables.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
Finishing Touches
- When cooking time is up, chop the green onions and sprinkle them over the dish before serving.
Notes
For thicker sauce, remove the chicken and veggies after cooking, then add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the slow cooker and cook on high for another 10-15 minutes. Leftover veggies can be substituted into the recipe as desired.
