Preparation
- Start by placing your chicken thighs in the slow cooker. Season them with a sprinkle of salt and pepper.
- Toss in the baby carrots first, followed by the sliced bell pepper and broccoli florets.
- In a bowl, whisk together the honey, soy sauce, garlic, and ginger.
- Drizzle the sauce over everything in the slow cooker. Cover it up.
Cooking
- Set it to cook on low for 6-7 hours or high for 3-4 hours.
- Once it’s done, shred the chicken right in the pot and stir everything together.
Serving
- Serve over fluffy rice or quinoa.
Notes
Feel free to swap in whatever veggies you have on hand. For a kick of spice, consider adding a dash of red pepper flakes in the sauce.
