  • 2 lbs chicken thighs (boneless and skinless) Works best for this recipe.
  • 1 cup baby carrots
  • 1 bell pepper, sliced Color of your choice.
  • 1 cup broccoli florets
  • 1/2 cup honey
  • 1/4 cup soy sauce Low sodium is highly recommended.
  • 4 cloves garlic, minced Garlic makes everything better!
  • 1 tsp ginger, minced Optional, but recommended.
  • Salt and pepper To taste.
  • Cooked rice or quinoa For serving.

Preparation
  1. Start by placing your chicken thighs in the slow cooker. Season them with a sprinkle of salt and pepper.
  2. Toss in the baby carrots first, followed by the sliced bell pepper and broccoli florets.
  3. In a bowl, whisk together the honey, soy sauce, garlic, and ginger.
  4. Drizzle the sauce over everything in the slow cooker. Cover it up.
Cooking
  1. Set it to cook on low for 6-7 hours or high for 3-4 hours.
  2. Once it’s done, shred the chicken right in the pot and stir everything together.
Serving
  1. Serve over fluffy rice or quinoa.

Notes

Feel free to swap in whatever veggies you have on hand. For a kick of spice, consider adding a dash of red pepper flakes in the sauce.
