- In a large bowl, combine the ground beef, bread crumbs, egg, chopped onion, Worcestershire sauce, salt, and pepper. Mix gently to avoid tough meatballs.
- Form the mixture into meatballs, about 1-1.5 inches in diameter.
Prepare the Sauce
- In a separate bowl, whisk together the beef broth, ketchup, Dijon mustard, and soy sauce.
Slow Cooking
- Place the meatballs in the slow cooker and pour the sauce over them. Cover with the lid and cook on low for 6-7 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, if you'd like a thicker sauce, stir in the cornstarch mixture.
Serving
- Once the meatballs are cooked through and the sauce is bubbling, serve them over mashed potatoes, rice, or noodles. Sprinkle with fresh parsley if desired.
Notes
For added flavor, consider using olive oil with lean ground beef. Feel free to add chopped bell peppers or mushrooms to the meatballs for extra nutrition. You can also prepare and freeze the meatballs and sauce ahead of time.
