  • 1 lb ground beef (or turkey for a lighter version) You can use lean ground beef or turkey.
  • 1/2 cup bread crumbs Use plain or seasoned bread crumbs.
  • 1 large egg This helps bind the meatballs.
  • 1/4 cup finely chopped onion You can substitute with shallots or green onions.
  • 1 teaspoon Worcestershire sauce For added flavor.

For the Sauce
  • 1 cup beef broth Can substitute with vegetable broth for a lighter version.
  • 1/2 cup ketchup Provides sweetness and flavor.
  • 1 tablespoon Dijon mustard For a tangy taste.
  • 1 tablespoon soy sauce Enhances umami flavors.
  • 1 tablespoon cornstarch To thicken the sauce.
  • 2 tablespoons cold water To mix with cornstarch.

Method
 

Preparation
  1. In a large bowl, combine the ground beef, bread crumbs, egg, chopped onion, Worcestershire sauce, salt, and pepper. Mix gently to avoid tough meatballs.
  2. Form the mixture into meatballs, about 1-1.5 inches in diameter.
Prepare the Sauce
  1. In a separate bowl, whisk together the beef broth, ketchup, Dijon mustard, and soy sauce.
Slow Cooking
  1. Place the meatballs in the slow cooker and pour the sauce over them. Cover with the lid and cook on low for 6-7 hours or on high for 3-4 hours.
  2. During the last 30 minutes of cooking, if you'd like a thicker sauce, stir in the cornstarch mixture.
Serving
  1. Once the meatballs are cooked through and the sauce is bubbling, serve them over mashed potatoes, rice, or noodles. Sprinkle with fresh parsley if desired.

Notes

For added flavor, consider using olive oil with lean ground beef. Feel free to add chopped bell peppers or mushrooms to the meatballs for extra nutrition. You can also prepare and freeze the meatballs and sauce ahead of time.
