  • 1 cup sun-dried tomatoes (drained and chopped)
  • 1 cup chicken broth
  • 1 can cannellini beans (15 oz, drained and rinsed)
  • 1 cup fresh spinach
  • 1 piece red bell pepper (diced)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian seasoning or to taste

  • ½ cup grated Parmesan cheese (for serving)
  • Fresh basil (for garnish, optional)

Preparation
  1. Start by washing and chopping your veggies. No need for perfection here; remember, the slower the cooker, the more forgiving the recipe!
Layering Ingredients
  1. In your slow cooker, layer the diced onion, bell pepper, and garlic at the bottom. Then, lay the chicken breasts on top. Add the chopped sun-dried tomatoes, cannellini beans, and spinach on top.
Seasoning and Cooking
  1. Sprinkle the Italian seasoning, salt, and pepper over everything. Pour the chicken broth over the top like a warm embrace.
  2. Put the lid on your slow cooker and set it to low for about 6-8 hours.
Serving
  1. Once the cooking time is up, shred the chicken in the pot with two forks. Mix it all together, and serve it up hot.
  2. Don’t forget to sprinkle freshly grated Parmesan cheese and garnish with basil for that extra touch!

Notes

Feel free to swap sun-dried tomatoes for roasted red peppers or olives if that's what you have on hand. This dish pairs beautifully with pasta or rice.
